Turn your hot water boiler or immersion on after the sun has gone down,  keep an eye on S3 this should be the hottest  S2 should be lower and S1 should not move.

I would go with mix up of sensors, but more likely air lock. If S1 was over 100 then this is in the panel as it should be.

Right, nearly there!

1. Massive airlock - resolved, we think.
2. Stuck pump, resolved.
3. Plumber hadn't connected s3, but will tomorrow.
4. Lack of pressure in  system, probably due to 1 and 2.

Have had 34 - 29 today, which I am guessing is not bad for such a cold (but sunny day).

I am guessing the night time running issue was down to s1 being so hot - with no cooling off the cylinder I guess it stayed higher than s2 for a long time after dark.
