I'd like to be able to store 30KWh of electricity. How do I calculate how many batteries I'll need. I understand the basics of the sums involved but is, say, a 100Ah battery really able to deliver 100 Ah or is there a fiddle factor that I need to apply?

Image dude,

That sounds like it's going to be a very big expensive battery.   First you need tobe sure that it is appropriately sized to the anticipated load and consumption.

My property uses on average  8kWh per day, and I was considering a 10kWh battery to be more than adequate.  You will also need to size your inverter to match your peak load.

Large lead acid batteries are expensive, and 30kWh  is approaching 1500kgs of batteries.

You might find that you can obtain 2nd hand telecom (exchange) batteries - like what CAT use at Macyntlleth, or those salvaged from mobile transmitter masts.

I would examine your energy bills first before paying out for a very large battery.  You will also have to find a way of reliably charging this battery, and it sounds like a diesel engine generator running on veg oil might be a possibility, or a very big wind turbine.

85Ah at 12v stires near enough 1kWh
