I've done it using a Salus CT100 mounted halfway up the tank.
Live from the iboost goes to the common terminal on the Salus, then the NC/NO connections go to the two immersion heaters, All the neutrals joined together.
Adjusted the temperatures so that the Salus switches just before the top immersion gets to hot and switches itself off.

Works a treat!
